In the curing chamber for 3 weeks already

I also made 2 pieces of  bresaola to test out in the new chamber! 



Above picture is before the humidifier came in the mail. I use only Mediterranean Sea Salt from http://www.saltworks.us/ and distilled water in a bucket...it works! Some fluctuations though. That's okay for the 1st week really.

Digital Hygro-Thermometer

Temp = 57 degrees and Relative Humidity (RH)= 72...Perfect! No, I am not a weatherman either!
