I use Nitrates because:
- Nitrates can preserve meat’s natural color. It also keeps the reddish color to the finished product.
- Nitrates impart a characteristic cured flavor to meat.
- Nitrates prevent the transformation of botulinum spores into toxins thus eliminating the possibility of food poisoning. Sorry...I don't want to die from eating!
- Nitrates prevent rancidity of fats.
- I use Insta Cure™ No. 2 AKA "pink salt"
