Why I use nitrates

I use Nitrates because:
  • Nitrates can preserve meat’s natural color. It also keeps the reddish color to the finished product.
  • Nitrates impart a characteristic cured flavor to meat.
  • Nitrates prevent the transformation of botulinum spores into toxins thus eliminating the possibility of food poisoning. Sorry...I don't want to die from eating!
  • Nitrates prevent rancidity of fats.
  • I use Insta Cure™ No. 2 AKA "pink salt"
